If I understand you correctly, it should be as simple as making editable
fields text boxes, and uneditable fields labels/text.  The widgets
themselves provide the visual cues the user's need to know what they are
allowed to change. 


I was recently working on a customer self service website that had
functionality for editing a user's account information.  Not all information
could be edited though (specifically the account number and some other
arbitrary data).  User's responded very well to having information that was
editable as text boxes, and uneditable information, as I said, labels.
