Speaking as a programmer I like them in my UI's because they do tend to
make validation coding job easier; though I realize this isn't the
paramount consideration or at least shouldn't be, honestly it is a factor
for me.

Given that they often (always?) reduce the probability of data error by the
visitor, shouldn't they be used wherever possible? Note I wouldn't use them
for a phone # because it'd be inconvenient not to mention inane, or for zip
code for the same reason. For dates though I don't see why they are not
always more desirable.
