Paola,

I agree with William...simplying the page by reducing form elements and
minimizing mouse/keyboard movement does have merit, but having a Remove
button and textfield seem crucial to making the page understandable.  I
would stick to the traditional layout that most users are already
comfortable with.

Also keep in mind that pulldowns often require two clicks to
operate...one to view the items in the list and one to change the selection.
