Rather than asking about "interrupts", you should be asking about "operating system services". The "interrupts" in DOS you are talking about are actually the entry points to the operating system service routines; DOS uses an interrupt to transition from user space to operating system space (in a primitive sense). More modern operating systems just use API calls at the user level. Once you make this change of perspective, you will realize that there are zillions of books out there that answer your question. Any book with "API" or the OS name in the title, for a starter. There is no common set of services avialable from all operating systems (that's what POSIX is for).
